matching skin tones

Hi,
Does anyone know the best way of matching skin tones for example if I took the head off one image and wanted to place it onto the body of someone else its hard to diguise the line across the neck where the two have been joined:bandit:

but what is the pipette tool, I am using Photoshop 6 and I can't seem to find anything like that:bandit:
