Hello, I'm wondering how you can take a regular photo and give it this stylized look where there are very dark, almost black areas and some are highlighted a bit and it's all kind of duotone? Maybe even lead me where I would start to do this? (upper image of guy)

you can try it in Adobe Photoshop Lightroom 2.2

Definitley photoshop.

first of all... not everything is photoshop. This effect is possible with traditional photography. I swear it is a travesty, we are losing our roots. By not learning how things used to be done, we are limiting what we can do in the future.
2nd. This is a simple effect that can be achieved with photoshop levels and a gradient map.
The levels can be found under the Image / Adjustments menu. Gradient Maps can be found under the Layer / New Adjustment Layers menu.
For this effect it might be easier to add the Gradient Map first. Go from the color you want to white.
The layers are a little difficult to explain but they are not that hard to figure out. Move the colored triangles you will notice the effects right away.
Playing around with these functions should give you the desired effect.
