^. Example is at Haru Sushi (http://www.harusushi.com/)... I'd like to know how you do those brush strokes in their logo. Another example I think can think of is the Lucent logo.

Actually draw the brush. Make it a brush. Draw a circle. Use the scissors tool to cut one point of the circle so it becomes a stroke. Then apply the stroke.

Er... okay but is that how I would achieve a real "brush" effect?

Do you want the actual texture? You'd have to draw the actual splits and branches and stuff of the brush, or have an available brush.

Why not use Illustrator, draw a circle with the brush/pen/pencil and then apply different brush strokes until you get the one you like?
